About

Tatsuya Hirose opened Y'EST Works in Asoke in June 2019. Born in Kyoto in 1994, he moved to Thailand after visiting Doi Mork, a 1,250-metre coffee farm run by the Lisu hill tribe in Chiang Rai. He had already opened STAND COFFEE near Osaka's Umeda Station while studying at Ritsumeikan University. The name combines 'Your' and 'Best'.

By 2023, fifteen farming suppliers fed beans from Thailand, Colombia, Guatemala, Brazil, and Papua New Guinea. Approximately one hundred varieties roast in-house across eight levels from Italian to Cinnamon, each mapped on flavour diagrams. Customers choose origin, roast, and brewing method.

Roasting

Japanese-owned roastery specialising in Thai coffee beans. Roasts approximately 100 varieties on-site. Medium to medium-light profiles emphasising nutty, easy-drinking characteristics. Sources from Thai origins including Doi Mork in Chiang Mai.
